Recovering and blue apron

I am finally starting to see major improvement from being sick which is great. Another 2-3 days max and i should hopefully be 100%.

Tonight i finally made one of my thanksgiving blue apron meals. Cornish game hen and sourdough stuffing. Delicious!!!

I am super stoked with how this turned out and i got 3 meals out of it. I took some tastes tonight and will have one helping for lunch tomorrow.

Weekend Catchup

Hi!!!! I hope everyone had a great thanksgiving! Mine didn’t go quite at planned. I was supposed to meet my boyfriend’s family but Wednesday during the day his grandma fell and broke her hip and was hospitalized. Thanksgiving was cancelled and he drove up by himself to see her in the hospital.

Tuesday thoughts and Blue Apron!

2 days until Thanksgiving!!!

Sunday morning i made cinnamon rolls and when i say made i mean i opened the package and put them in the oven Hahahahaha. Artemis and i tried for another run, i made sure she pooped right before we left and this time we got about 7 minutes into the walk until she pooped again. My mom made a good point that she might be nervous in the new area causing her to go more. We will keep trying.

Sunday night i hoped on the treadmill and did my first run post surgery…..2 whole miles!!! And holy crap was it hard. A month off running is a looooong time to the body.

Once again i tweaked it a little. I cooked some of the onions which was not part of the recipe.

Sadly i missed my training appt tonight. I took the dogs out, ate half a bagel, locked the door handle and walked out the door…….literally 3 steps later i realized my keys were still on the hook after i had slammed the locked door shut. I sat in the 38degree weather in workout for about 40 minutes then my toes were burning which is not good, neither of my roommates had answered so i did a quick walk the .75 miles to a nearby subway where i bought dinner (i did have my purse thankfully). My roommate came and picked me up.

I continued the cardio kick and hopped on the recumbent bike in the bonus room for 35 minutes then watched some amazing race. An oddly slow yet busy night.

Being locked out in the freezing rain oddly made me miss the trail. I know i would have spent many days like that on the trail.

Are you looking forward to the weekend, because i am !!!!!! I dont have any amazing plans or anything, i am going for my first short run tomorrow with my doggie, hopefully she doesn’t trip me. Then i am helping my friend pack. The boyfriend and i are hopefully having dinner together on Saturday (his work is crazy so i never know fo sure until the night of), then Sunday is just me and Artemis hanging out.

Made a delicious Blue Apron meal, Lentil Bolognase (probably not the right spelling) It is flipping delicious!!! I had it for lunch yesterday and today, I also have a full serving in the freezer and like a half a serving in the fridge to snack on this weekend!

I added some extra noodles i had to make a little more.

I was really impressed with this meal.  I will definitely be making this one again.

So stoked to have 3 workouts in the bag so far this week!!!! VERY happy to be back in workout mode, though i am starting slow and building back up.

I love that it had me toast my own tortilla chips, it was super easy but took the meal to the next level.

I added a can of kidney beans to it for a little more protien and body.

I also added more cheese lol.

Once again i got about 4 meals out of this instead of 2, which makes me happy happy happy!!!

And in my box i ended up with an extra avocado and an extra bag of cilantro which worked out perfectly since i had extra soup.

Still drinking lots of tea and using essential oils to try and kick this cold.

Blue Apron week 3 meal 3

Wednesday!!!!! We are halfway through the week. Celebrate!!!!

Last night i went over to my friend’s for dinner and girl talk. Ate pizza and drank soda and felt sooooo bloated afterwards. I always overeat when it comes to pizza, i just love it sooo much!!!!

When i got home i did 40 minutes of spanish lessons. El tiene gato. El gato es blanco. Lol

Then i made my last blue apron meal from last wednesday to take for lunch. It made 3 servings. LOVE when i get extra servings.

I have a set of 10 glass nesting bowls that all stack in each other and are sooo nice, but there is no room in the kitchen that i share with my roommates. Nor do i want to risk them getting broken so i use tupperware. Also there is NO counter space.

I cannot wait to have a house a an amazing kitchen!!!! Sadly that is probably a ways away. Well enjoy the rest of your wednesday!

I had never made anything tempura before. I’ve eaten and love tempura but have never made it.

And i was definitely skeptical about acorn squash tacos.

Yea, our counters are a little messy.

The prep work wasn’t too bad except for the squash which was a pain. Also i had way more onion and way more squash than i needed.

While cooking i enjoyed some pink lemonade emergen-c cause i have been feeling a little funky.

I’ve also never really fried anything so that was interesting. It was a lot easier than i thought. I may have to try some fried chicken soon.

The finished product……and the consensus is that these tacos are actually pretty freaking amazing!!!!

Tonight i came home and did lesson 1 part 1 of rosetta stone Spanish then made my dinner.

I added some extra spiral noodles and a little bit of extra bottled pasta sauce that i had left in the fridge.

This meal was actually pretty easy to make and made a ton!!! Though its really light which is nice.

Oh i also added a little string cheese hahahahaha.
I ate a full helping, have lunch for tomorrrow and a lunch this weekend and still put 2 helpings worth in the freezer.  Woot woot 5 meals out of this dish.

After dinner i did lesson 1 part 2 or rosetta stone spanish.

So big decision…….remember that house guest we had that stole my heart, the black dog. Her owner needs a new home for her and has asked if i would like to adopt her.

I love animals and growing up my house always had pets but they were family pets and my parents always paid for everything this would be my first real pet that was completely my responsibility, though our house already has a dog, my roommates, so it wouldn’t be too big of a change. And we all help out and take the dogs out when we get home and such but she would be my dog and my responsibility. This animals well being would be my responsibility…..that is a huge undertaking and should not be entered into lightly.

On top of that this poor dog was severely misstreated for the first 2 years of her life before her current owner got her from the humane society so she is kind of skittish. But she is the sweetest thing ever…….and who are we kidding she has already stolen my heart……I believe i am getting a dog.

Any advice?

Blue Apron Week 2 meal 3 Brie Grilled Cheese Sandwich

Hola!!! Its Tuesday!!!

FYI this sandwich was freaking AMAZING!!!!

The end of last week i was still recovering from my surgery and only working half days. One day i was going in at 12:30 so i made this grilled cheese sandwich for lunch for my mom and i.

20151029_105009 20151029_105657  The only change i made was that i added a little bit of raspberry balsamic vinegar to the salad dressing (i was out of oil).

I let my mom finish my salad because i was a little full and i don’t love arugula that much, but my mom loved it.

But a seriously delicious sandwich!! I will definitely be making this again!!

Blue Apron week 2 meal 1 Catfish Piccata with Fettuccine

My Blue Apron box came!!!! Once again everything looks soooo good!!!

I was really excited but also very hesitant to try catfish, I have never had it before.

20151028_183116 I was so happy with this dish, it was light and tart. The catfish was sooo good!!! No fishy smell or taste. Next time i would probably add some tomatoes though, i am pasta purest, i think all pasta should have some bit of red in the sauce hahaha.

I even ended up with enough left over for a small lunch, talk about getting your money’s worth!!!!
