Overall they tasted good but I need a lot more cheese. I made extra enchiladas to put in the freezer so I might buy some less healthy enchiladas and mix them with the healthy ones. One unhealthy and one healthy enchilada is better than two unhealthy enchiladas right?
Happy Hump day!!! The week is now more than half over, woot woot!!
This morning I got the call that i wasn’t needed for package delivery today…….HALLELUJAH!!!!!! My right forearm and right butt cheek have noce bruises on them from a good fall yesterday.
I got to relax and sort of sleep in this morning then make myself a delicious breakfast sandwich.
After that came studying. I was actually really looking forward to studying today hahahaha.
I got through one module then took a break and did the reading on a second module. I got up to cook my Blue Apron meal.
There are short lecture videos and activities that come with studying so I did a little multitasking
Yep, I had videos playing while I cooked.
I got through 2 entire modules and a practice midterm today.

I am so excited to garden this year. It will be a noce break between working and studying.
And I am soooo looking forward to all the amazing meals I will be able to cook with fresh food. The amazing boyfriend has agreed to help me with the garden as well 🙂 added bonus.

I am stoked, I got a coupon for Blue Apron off the Hungry Runner Girl’s blog weeks ago and finally put it to use and got a Blue Apron box!

Not too shabby. Now I am set for dinner tomorrow if i get called in to sling packages and if not I have an awesome brainfood lunch for studying tomorrow………even though i need the money I am hoping for the studying because I am wiped out from delivering packages all last week and today, and today I fell down some stairs while doing it and am SORE. I would like to sit on the couch tomorrow and study. Keep your fingers crossed for me.

This is my last fish dish from Blue Apron. They just don’t freeze very well or reheat that great, not that I think any fish does, so it doesn’t quite work for my lifestyle. Except that salmon fettuccine one, that reheated beautifully. Anyways here is lunch for the next 2 days
As always I tweaked it a bit and made it a sort of Asian teriyaki salmon. I figured a stronger flavor would reheat better.
Delicious spinach in the potato salad. I used half the mustard seed instead of all and only used maybe 1/4th of the horseradish because I am not a huge horseradish person.
I worked 4.5 hours today and was super happy to get off early and am so looking happy the Tulip festival only has pne weekend left. Not that it has been bad at all but I am so ooooh tired. I will he sleeping and being very lazy my first weekend off. Except for my workouts I will do nothing but read/watch tv.
After work I came home and cooked my Blue Apron meal then got ready for my date. This was date 2 for this gentleman and i…….I hate dating. Where dkd all the ruggedly handsome, confident, smart, interesting, men with tattoos go? One I am not that super attracted to him yet but it’s date 2 and he didn’t try to kiss me at all? Is he trying to be friend zoned?
Any idea what the secret to dating is?
Happy Wednesday! More than halfway to the weekend! Today was my first full day back at work this week. I’m not 100% better but I’m like 85-90% better. When i got home i took Artemis for a short walk since she’s been cooped up since our run on Saturday due to me not feeling good.
She still knows she’s spoiled though hahaha.
I made my last Blue Apron meal from my box last week. Enchiladas. Sorry i failed to take prep and cooking photos.
This has a fair amount of mushrooms in it and i dont quite love the taste if mushrooms in most things except ravioli and marinated and grilled button mushrooms but the flavor of the enchiladas totally masked the mushrooms which was perfect for me, i get the healthy benefits without having to taste them.
These are some seriously full enchiladas. I brought 2 for lunch and ended up eating half for lunch and half for dinner.
I went to target on my lunch to get some planting stuff and found some great oatmeal on sale for practically nothing.
This box has 8 instant oatmeals in it for $2.58!!! I got apple cinnamon and maple brown sugar. For $5 i now have lunch at work for the next 3 weeks. I can throw some fruit or nuts in to spice it up if necessary. Sometimes i LOVE target.
I planted 3 more potatoes in the white containers
I transplanted my first tomato and pepper start. I figure ill transfer 1-2/week and see how they fair.
My peas and corn are still growing!!!!
Now off to bed so i can go to spin class in the AM. Goodnight!!!

I overslept for the 2nd time this week. I missed spin class so the goal is to wake up early tomorrow amd spin and swim. No spin class so ill bring headphones and rockout to Pandora lol
I don’t know if i just need more sleep (which would be difficult to accomplish with my schedule) or if I’m fighting something off.
I am really proud, 3 out of the 4 weekdays so far i have taken Artemis out for a walk that is a record high for us and i plan to continue it.
Now for my Blue Apron meal
Boiling my beet. Then I read the directions and realized i was supposed to slice it so i sliced it then continued cooking it hahahahah.
I deviated from thd recipe and added some honey. I have a million, almost literally, from my trail prep.
Technically the fish was supposed to be on top when plating but this is in tupperware for lunch tomorrow so it ended up on the bottom lol.

It was a long crazy day at work.
Yep chips and soda, thats the kind of day it was at work. I definitely think i am fighting something off. I woke up in the middle of the night last nighy very nauseas and feeling like crap and i had a headache all day that ibuprofen is barely denting. I have also had that slight pink to my cheeks that accompanies a fever. Uh oh.
In a happier note i made my 2nd blue apron dish of this week and it is SUPER delicious!
I always add extra pasta to get an extra helping out of it hehehehe

This dish is awesome and is most definitely a recipe i will be holding on to. And now I am going to pass out because i work tomorrow and i am already exhausted.
Met with my trainer this morning and am finally getting back on track with my workouts. Before today i hadn’t worked out since my run on Saturday. Yes, i live a life where 3 days without working out is a lifetime hahahaha.
Sorry i didn’t post yesterday i went out on a pizza date and passed out as soon as i got home to make it to try and get in 7 hours of sleep before getting up to go to the gym this morning. The date……….well the pizza was good lol. The converstation kind of ebbed and flowed, there were some awkward silent ebbs though hahaha. This was our second date so i kissed him at the end of the night……also awkward, i sort of ran to my car after that LOL.
Speaking of pizza letrs talk Blue Apron Meal 3! Veggie Calzones. So they were supposed to be mushroom, collared green calzones, they turned into collared green, onion and pineapple calzones to fit my desire lol.

I am excited these actually reheated quite well for lunches. Out of this box with me doctoring the meals a bit and adding and subtracting a few things here and there i got a total of 10 meals instead of 6, woot woot!!! So far 4 of those are in the freezer for a later date, it might be 5 depending on what i eat tonight and if i make one of the meals from the box that is arrive tonight for my lunch tomorrow or not.

Lastly i have a finanicaly dilemma, though i have come to a decision but yea. So i by no means make a lot of money. I am lower middle income and personal training and races cost money, also i have student loans and credit card debt and spent several years living beyond my means. Mixed with my medical debt from my sugery i am slowly paying off i am broke most of the time. I just set up a whole budget for myself to get back on track and start paying off debt and stop living beyong my means, yay me.
So of course, my gym emails me and says we are raising our personal training fees, not by a lot but every dollar counts. I have like 4 hours left of training on my account so i know i was going to have to buy more soon but i was thinking of doing a lesser package but of course now if i buy the largest non-reaccuring package i can lock my price in and train consistently for about 4 months which is great, but it is going to cost me $1440. OUCH!!!!! This does give me the lowest hourly cost and i am splitting it into 4 payments but of course it has to be purchased by the end of the month so the first payment is going on my credit card. I was feeling guilt about this after promising myself not to live beyond my means but i sat down and really thought about it and i have been battling depression pretty badly out here the last few months and consistently working out has kept me on a happier, healther past. My mom made the great point of saying that $1440 is a lot but its also a lot cheaper than months of therapy LOL.
Well my last alarm didn’t get off this morning so i work up about 45 min later than i wanted but thankfully i still have plenty of time. I ran a trail 10k this morning, which was actually 5.5 miles because some of the trail washed out and was being repaired. I will review the race in another post.
Then i had the house to myself which was so nice.
I watched the last hunger games which i had yet to see
Ate some leftover sweet and sour rice and veggies
I got cuddles from my fav dog
And i made my second blue apron meal this week. Delicious quiche.
First time i have ever shelled peas lol.
I made a few changes to the recipe, i put the shallots in the quiche and some of the pea shoots in as well instead of making the accompanying salad.
I actually had to put them back in for an extra 15ish minutes to cook longer.
And now goodnight.
Well i got home at about 6:10 today and Blue Apron was waiting for me!!
You probably noticed i hadn’t had blue apron in awhile. It got to the point where i wasnt cooking everything or i didn’t love everything. Dont get me wrong, nothing was ever bad just some of it wasn’t to my taste so i was wasting things. And at $60/box that was unacceptable. So i took some time off and now my rule for myself is, id every meal in the box doesn’t look amazing then i skip it.
Tonights meal (though im not eating it tonight)
While cooking i managed to get a load of laundry washed and in the drying and a 2nd load into the washer.
Garlic and almonds (i added onion)
I added some aspargus, yellow squash and zucchink squash that i had in the fridge.
I also had an extra salmon fillet in the freezer i thawed and cooked. With my few additions i made this into 3 meals instead of 2

Though i didnt eat it tonight i did taste it and YUM!!!! The freekah (grain thing) with the fresh veggies and lemon juice perfectly balances the spiced salmon. At least in my opinion.
And 2 helpings went in the freezer.
I also emptied the dishwasher and got another load started. And now 3 hours after i got home its time for bed so i can get up and workout in the AM before work.
