Blue Apron week 3 meal 1 and big decisions

Tonight i came home and did lesson 1 part 1 of rosetta stone Spanish then made my dinner.

I added some extra spiral noodles and a little bit of extra bottled pasta sauce that i had left in the fridge.

This meal was actually pretty easy to make and made a ton!!! Though its really light which is nice.

Oh i also added a little string cheese hahahahaha.
I ate a full helping, have lunch for tomorrrow and a lunch this weekend and still put 2 helpings worth in the freezer.  Woot woot 5 meals out of this dish.

After dinner i did lesson 1 part 2 or rosetta stone spanish.

So big decision…….remember that house guest we had that stole my heart, the black dog. Her owner needs a new home for her and has asked if i would like to adopt her.

I love animals and growing up my house always had pets but they were family pets and my parents always paid for everything this would be my first real pet that was completely my responsibility, though our house already has a dog, my roommates, so it wouldn’t be too big of a change. And we all help out and take the dogs out when we get home and such but she would be my dog and my responsibility. This animals well being would be my responsibility…..that is a huge undertaking and should not be entered into lightly.

On top of that this poor dog was severely misstreated for the first 2 years of her life before her current owner got her from the humane society so she is kind of skittish. But she is the sweetest thing ever…….and who are we kidding she has already stolen my heart……I believe i am getting a dog.

Any advice?

Blue Apron Week 2 meal 3 Brie Grilled Cheese Sandwich

Hola!!! Its Tuesday!!!

FYI this sandwich was freaking AMAZING!!!!

The end of last week i was still recovering from my surgery and only working half days. One day i was going in at 12:30 so i made this grilled cheese sandwich for lunch for my mom and i.

20151029_105009 20151029_105657  The only change i made was that i added a little bit of raspberry balsamic vinegar to the salad dressing (i was out of oil).

I let my mom finish my salad because i was a little full and i don’t love arugula that much, but my mom loved it.

But a seriously delicious sandwich!! I will definitely be making this again!!

Blue Apron week 2 meal 1 Catfish Piccata with Fettuccine

Happy Saturday!!!!

My Blue Apron box came!!!! Once again everything looks soooo good!!!

I was really excited but also very hesitant to try catfish, I have never had it before.

20151028_183116 I was so happy with this dish, it was light and tart. The catfish was sooo good!!! No fishy smell or taste. Next time i would probably add some tomatoes though, i am pasta purest, i think all pasta should have some bit of red in the sauce hahaha.

I even ended up with enough left over for a small lunch, talk about getting your money’s worth!!!!

First day back at work

Its Wednesday!!!! Like everyone else I am celebrating that we are more than halfway through the weekend……yes I am celebrating even though today was my Monday.

Today was my first day back at work post surgery, i went in for 4 hours…..and my hour 2.5 I wanted to curl up in a ball in the bathroom and pass out.

I took half a pain pill, i have a desk job where i sit on my butt, which is where my stitches are. I brought a pillow to sit on. The first hour went by pretty ok, I had to make sure i focused extra good because of the pain pill, i didn’t want to make any stupid mistakes or miss anything. The second hour was still ok, I had a little bit of nausea but was mostly ok.

Then the heat kicked on because it was raining outside and the pain pill took full effect and about every half hour I was running to the bathroom to throw up. I made it to my 4 hours, tied up loose ends and ran out the door to lay down in the car and let my mom drive home.

I got home, laid down, and took a nap. Thankfully the nausea is starting to subside. Tomorrow and Friday i have 5 hours scheduled, fingers crossed i can make it. Tomorrow i am going to try 1/4 pain pill and see if there is less nausea and it still keeps the pain tolerable.

I would like to say days like today really remind me how awesome my job is and how wonderful my coworkers are. They really work with me and genuinely care about my well being, they do not make me feel like just another number in a time clock.

It’s Tuesday!!!

Last night i made myself get off the couch and make my 2nd blue apron meal, granted i had mom help me but i still got up and did it.

Of course the directions were nice and easy to follow.

When you are done cooking the directions tell you how to plate it, so far both my dishes have looked like the pictures on their directions.

Monday I tried to take only half pain pills and spread them out past the every 6 hours that is prescribed. I have to get used to less since i am supposed to go back to work on Wednesday, I might need to just do a half day on Wednesday because sitting for several hours is painful and i can only sit in certain positions….. we will see how i feel tonight. I will keep you posted.

That made me laugh so i had to put it in. And it is totally true.

My trainer kicked my butt Monday night. Tuesday and Wednesday I felt it in my thighs and glutes!

Spent some time being a pedestrian lol. Dropped my mom’s car off to get the oil changed then walked the rest of the way to work, then walked back to the dealership at lunch. Thankfully i rememebered to not wear heels that day hahahaha!

Tonight my trainer kicks my butt again.

Tuesday i counted my walking as my cardio hahahaha and wednesday I did a sort of HIIT workout on the recombent (did i spell that right) bike at my place. I watched some TV while doing interval training.

AHHHH my mom comes into town tomorrow, i am so excited! Yes i am totally a mama’s girl, i miss her!!! and on top of that holy crap we going car shopping, i am buying my first car!!!! Don’t judge that i am 27 and buying my first car lol.

Mom is staying through to my surgery next weekend. Can’t wait to share all the trouble we get into with you!!!

Weekend Catch-up

Hi!!!!!!!

It’s Tuesday!! After today we are like 1/3 through the work week!!!!

I didnt post over the weekend but here is how it went.

Friday night i went over to my friend Sarah’s and we had Papa Murphy’s pizza and watched Hot Pursuit, (i know i am behind lol) it was super cute. ( I need to remember to return it to redbox lol.

Saturday Carra (roommate) and i hit the gym and did the elliptical then i had a great lazy day, binged on “How to get away with murder” and did laundry.

Sunday Carra and i went to a yoga class at 24 hour fitness…not bad for a gym class. Then went to a bakery/cafe in SW Portland that was freaking phenomenal!

I had an egg and cheese sandwich on like a cibatta roll with this tomato onion relish, super good!!!!

Then i finished ‘how to get away with murder’ season 1 and caught up on this season so far. I am totally addicted. Did some more laundry and some grocery shopping.

Sunday night i went over to the BF’s house and he made me dinner, he just signed up for blue apron and made this salmon dish with a farro salad…….holy hanna, it was delicous. I am so signing up for Blue Apron.

I still haven’t gone a corn maze and my time is running out!!!!!!

Time to start upping our water intake.

Hi everyone!!!!!

Oh my goodness, mom and I start the trail in 3 weeks!!!!!

With that being said it is time to start upping our water intake.

On dry spots on the trail when you get to a water source you’ camel up’. This means that you clean your water then drink as much as possible then clean more to take with you.

Doing this means you stay hydrated longer, you don’t have to dip into your water stash until later in your day.

With that little background now stated we can talk about why mom and I need to start drinking more water before we even start the trail.

Most people are never fully hydrated, we get some water fro, the coffee we drink and soda etc. But still most of us don’t get the full amount of water our bodies need to function at their optimal level.

Something that will help us in the desert is to be fully hydrated when we start.

Today is March 16. This week’s goal will be to drink 1 liter of water every day…..that is not including any coffee or other beverages, just pure water.

My camelbak is one liter. That is 32oz or 4 full glasses of water.

For the 2 weeks before the trail the goal will be double that,  so 2 litters of water a day. That will get us to full hydration. …….at least according to science lol.
