Blackberry Balsamic reduction

 

I got this off pinterest.

Remember all those blackberries we got from the farm? Time to put them to use! I cannot wait to try this on meats!!! I am going to make a blackberry balsamic reduction and a blackberry rosemary balsamic reduction.

Ingredients:

2 1/2 cups blackberries

1 1/2 cup balsamic vinegar

2 tbsp. molasses

(rosemary for 2nd reduction)

This is the amount used per reduction, so all in all it was doubled

 
Put all ingredients is a sauce pan and simmer over medium heat.

Mash blackberries as they soften. Reduce heat if it starts to boil.

Continue to simmer until liquid has reduced by half. It should thickly coat the back of a spoon when it is done.

Strain through a mesh sleeve and discard seeds

Store in a jar or bottle with a tight lid, it should keep in the fridge for weeks. Or you can do what I am doing and freezing it in freezer bags for later.

I froze some of it and may have licked the bowl clean with some ice cream

Sooooo freaking good!!!! I am going to look forward to this every year!

Day 13-15 of 28 day cleanse

Day 13 was pretty normal and chill

Day 14 i woke up to the worst muscle cramp in my right leg. Cramps usually come from an imbalance of sodium, potassium and water so i added some stuff into my diet for the 14th and 15th

I got free leftover pizza from the pizza place next to work and i wasn’t turning down free food. 

I immediately regreted the pizza, i felt horrible. The maple bar on day 14 pretty much totally fine, the pizza, nope. So excited for a yummy, healthy smoothie in the AM. 

I’ve increased my sodium intake and my fluids and so far the cramps have gone away. 

Its been 2 weeks and i am down about 5lbs. I am feeling better overall I’m craving better food. I am loving smoothies/juice in the AM and a big salad as part of a late lunch then eating a real dinner. And as you’ve seen i can have off day or throw in extra good food if i am going to workout. 

I think this may go from a cleanse to a lifestyle change. 

Though now I’m reconsidering my cheap pizza after the half marathon…….hmmm what else would i want????

Monday Motivation**July 31, 2017

Goodbye July!!! Less than a month less of summer semester.

Workout goal- make it through the half marathon hahahahaha! This was my worst training period ever. I did not train like I should have but I have run half marathons before and I have been running so I should be ok, but I can pretty much guarantee no PR will be being set so I am just going to go out and have fun.

Days 10 & 11 of 28 day cleanse

Once again these 2 days were pretty similar

Juice for breakfast

Lunch was a salad both days and both days I had a burger for dinner. I was craving it hahaha. And both days the burger 100% hit the spot.

Wednesday I ran 2 miles in the morning before work.

Thursday I went to a local park and busted out 5 miles! With Artemis.

It wasn’t too hot thankfully but she hit every water source she could find hahaha.

Day 8 & 9 of 28 day cleanse

Hi!!!

I ate almost the exact same thing both days so i combined it into one post.

Breakfast Monday morning

Salad for a snack at work, i ate it before i could take a picture hahaha

Grocery outlet had the more expensive slightly healthier soup so i tried it

The soup was really flipping good!!!! Well for a canned soup anyways lol

I had a quesadilla when i got home from work before bed. 

Monday Motivation**July 17,2017

One month of summer classes down. Summer is probably the most difficult time for me to be in a full time job and part time school. The weather is so nice and I just want to be at the beach, and hiking and taking weekend trips. But it will all be worth it in the end.

Workout goal- 4 workouts, I made it to 3 workouts last week so I want to up it to 4 this week.

Today is day 2 of the cleanse, but I will fill you in on that tonight when the day is over hahahahaha.

Monday Motivation**July 10, 2017

Week 3 of summer semester classes. The weather is heating up over here!!! Well it is heating up then cooling down then heating up then cooling down. Early morning is the best time to run but that is a problem for me on several levels right now. Saturday and Sunday morning I already get up at 5am to make it to work by 7am. I would need to be in bed asleep my 8pm to get up at 4am to run, that is really hard to do especially in the summer and especially when Friday is the only full day I get with my boyfriend currently so that is pretty much a no go. Mon-Wed I work 2:30-11pm. If I am lucky I can be in bed falling asleep by 12:15am, normally it is closer to 1am though. Which gives me a 8:30-9am wakeup, which isn’t too bad except currently my mattress is killing back (I am hoping to have a new one soon) and because of this I have to let my back stretch out in the am before I can run, meaning the earliest I can run is around 10am. I need to find something productive to do that still rests my back between when I wake up and 10-10:30am because right now I just watch TV and a body at rest tends to stay at rest.

That is my current conundrum.

Week 2 of summer semester classes. Medical terminology is a lot of information quickly but I am LOVING it!!!

34 days until the half marathon…….. I better kick it into gear. I should be able to work it out just right.

 

Last week I hit my 3 workout goal.

I ran twice and did hot yoga once.

Woohoo classes are over!!! At least for a little while, now I can relax.

Workout goal: 3 workouts.

I am still battling off whatever sickness this is. It has moved from my throat to my nose, sinus pressure and plugged ears. I still have a cough and my throat still hurts but not like it did. I have been taking nighttime Theraflu tea to help knock me out because I know the more I can rest the faster I will fight this off.

I am hoping to get in 3 workouts this week. at this rate I am thinking it will be 2 walks and hopefully 1 run. If I can get back on my feet this week the BF and I are going to run a half marathon on August 5th. I will keep you posted.
