Bridal shower! 2 weeks until the wedding and sickness!!!

Taco salads have made an appearance over here again. So easy for lunch and last minute/running late mornings. It is just lettuce, salsa chicken (throw chicken and salsa in a crockpot and let it cook on low for 6 hours or high for 3 until you can shred it and voila), cheese and hot mild sauce.

Mom was in town this weekend!!! We all went out to breakfast!

My bridal shower was perfect! My wonderful soon to be in-laws put it on for me, it was fun but low key which is perfect for me. There was delicious food and drink and I got some amazing gifts!!! Moments like this are so surreal!!!! I’m really getting married in just 2ish short weeks!!! So crazy!!!!! Makes me have heart palpitations hahahahahahahaha!!!

3 Weeks until the Wedding!

How do you tell that face to get off the bed? Sometimes I can and sometimes I can’t.

I worked out Sunday and Monday but took Tuesday off because i was still a little squeamish after lab which I will tell you about on Friday.

Quickest dessert I ever made.

This is my breakfast most work mornings. I mix my coffee instead of plain water with it so I get breakfast and coffee in one!

Adjusting to the first week of school new schedule meant I didn’t plan enough meals and made a few fast food stops before class. I THINK I might be better prepared today, if not i will allow myself subway again but no other fast food, I will be in that dress sooner than I know!!!!!

This is how I feel some days about anatomy already. I love it but all the sheer quantity of information is daunting. Though I am learning once I really dig in so far it is manageable.

The rare morning I actually have breakfast.

We went on a nice walk before lab yesterday. I think Tuesdays might be her new favorite day, I am home most of day with her while I study and so far both Tuesdays we have gone on 2 walks to get out some of her energy so I can actually study and to break up my monotony of studying for several hours.

Brandon made some delicious beef and barley soup on Monday. It is great comfort food in the crisp fall weather we are starting to have and really nice after a tough day.

I have always been a great sleeper, I can fall asleep easily and stay asleep but man, I would say already like 3 days this quarter I have had so much information running through my head either with anatomy stuff or with wedding stuff that there have been a few semi-sleepless nights.

Coffee is life.

So yes, just over 3 weeks until we get married!!! I have my bridal shower this weekend that my amazing future mother-in-law and future sister-in-laws are throwing for me. And my mom will be here for it so that will be really nice! We also have a half marathon this Sunday that we have done the bare minimum training for so that will be fun….probably not hahahaha!!

Even this small elopement of 7 people (including us) is a little stressful, probably because it includes travel but I cannot imagine how stressed I would feel if we were doing a larger wedding with all these things I had to coordinate. I am so thankful we went small and intimate. I am counting the days, plus hello vacation!!!!

A productive weekend

I needed some energy gels for our long runs so we hit up REI and they were having a sale.

Sports bra for $30! Score!!!!

Stocked up on gels, jelly beans, and chews to get me through to the half marathon.

Also another batch of tomato sauce in the slow cooker. We are running out of room in the freezer. I will have to can the next batch hahahaha.

Finally started watching 13 reasons why and I am in love with it!! Only on episode 6 and i cannot wait to find out who the other 7 people are!!! And where does Clay come into it? With school slowly coming to an end i should hopefully be able to finish it in a reasonable amount of time.

That being said I have 1 essay, 1 discussion paper, 2 quizzes and 1 final left and i will be done for 5 weeks!!!! So stinking excited!!!!!

Weekend wrap-up

Cause I go back to work tomorrow morning.

My new injini toe socks came!!! I bought the color no one else wanted and got it for $3 cheaper. Love it!!! And they still work just as well.

Date night Thursday night. I fixed my hair before we went out lol. Thanks for the wrap thing mom!!!!!!

We FINALLY saw deadpool 2, at the $4 movie theater near us…….I laughed a lot and very loudly. Like I think I embarrassed Brandon hahaahaha!!!

Then we went to breakfast the next morning at this amazing place called Word of Mouth Neighborhood Bistro. I think I mentioned it a few weeks ago. We have a 30 min wait so we walked around a bit. We took his parents for their birthdays.

My breakfast…..of which there is still some in the fridge and I ate just that all day. The portions are HUGE.

They are famous for their cinnamon roll pancakes so Brandon got one to go and OMG they did not disappoint.

Then it was homework time for me.

The rest of Friday was homework and food coma laziness.

Saturday we slept in a bit then got our butts out the door for our 5 mile run.

I totally tripped and ate it around mile 2 hahahahaaha, I ended up with a sweat dirt mark and that was after I washed off in the river.

Artemis was dead tired after. I cant tell if she is just lazy from a winter of no activity or if she is getting old.

The socks were a success!!! Now I just need Artemis to not eat the toes. I have lost 1 pair of toe socks that way. And a other one just disappeared….unless she ate those too and I never noticed hahahaha.

Dinner…….running makes you hungry….I might have had a 3rd one.

Then he suffered through this with me……but I LOVED it!!!! It was so cute and as someone who has been overweight before it totally resonated with me!!!! Confidence in yourself is sexy!!!!!

Had a quiz tonight for my writing class, though I think quiz was a reach, it had no time limit and was about academic honesty. I think classes just have to follow stupid rules about having a certain amount of test/quizzes……and yet somehow I only got an 80 on it. It asked about citation formatting, need I say more?

Neither of us felt great so we got del taco for dinner and watched the 2nd half of Black Panther, we started it last night but didn’t finish it. Now it is early to bed for us and hopefully we

Life Changes and So Must We

Hi!!!!! I originally set this blog up to chronicle my journey hiking the PCT, AT and CDT but plans changed. While that is still a goal for me one day, my foreseeable plans have changed so I thought the blog needed a bit of an updated look.

My life is now about becoming a nurse, getting back into shape and turning our quarter acre plot of land into a little farm, or at least as much of a farm as he will let me hahahahaha!!!!

There will still be hiking, running and food posts plus so much more! I hope you will continue this journey with me!
