I know we are still smack dab in the middle of summer but since I am out watering every day and plodding away in the garden and watching my food grow; I can already see and feel fall coming in the mornings and evenings. Which I am super excited about because Autumn is my favorite month but for the first time I am thinking, “Summer, don’t go too fast…..I want more food hahahaha.”

Here in the pacific northwest by the time the summer solstice hits we have sun from like 4:15am to 10-10:15pm. Now just over a month past the solstice the sun is behind the last houses by 9pm and it is just starting to peak over the horizon when I get a quick morning water in at 5:40am to stave off the 98 degree weather. A quick hit of the hose in the AM means I don’t come home to wilted plants at 5pm. I do the major watering after i get home from work.

Today is a medium busy day for me, I am working until mid-afternoon then meeting my friend for a coffee and a chat

then heading home to get in a quick 1.5 mile run

then making some delicious stuffed zucchini.

We opened our first batch of homemade refrigerator pickles and they are DELICIOUS!!!! I wanted to eat the entire pint jar in one sitting……and no I have not been a major pickle lover my whole life.

Got tomorrows HW done today for the win! Staying ahead is game changing.

Had a quiz tonight for my writing class, though I think quiz was a reach, it had no time limit and was about academic honesty. I think classes just have to follow stupid rules about having a certain amount of test/quizzes……and yet somehow I only got an 80 on it. It asked about citation formatting, need I say more?

Neither of us felt great so we got del taco for dinner and watched the 2nd half of Black Panther, we started it last night but didn’t finish it. Now it is early to bed for us and hopefully we

Life Changes and So Must We

Hi!!!!! I originally set this blog up to chronicle my journey hiking the PCT, AT and CDT but plans changed. While that is still a goal for me one day, my foreseeable plans have changed so I thought the blog needed a bit of an updated look.

My life is now about becoming a nurse, getting back into shape and turning our quarter acre plot of land into a little farm, or at least as much of a farm as he will let me hahahahaha!!!!

There will still be hiking, running and food posts plus so much more! I hope you will continue this journey with me!

Monday Motivation**July 9, 2018

I only worked out twice this week! I started a new fitness program and I pushed it a little too hard. I tweaked my knee, taped it Tuesday evening. It’s still a little funky but its doing much better. Wednesday I took the tape off my knee and then taped my calf.

I was sort of a hot mess. I did an arm workout on Thursday then didn’t work out again the rest of the week. So happy Monday and I am starting from the beginning again! But I won’t go crazy tonight and reinjur my knee and calf.

My blueberry mixture turned out more like blueberry cookie dough, maybe because I used 1/3 butter and 2/3 crisco (I ran out of butter) so instead of mini loaf pans I stuck it in a shallow rectangle pan and make them slightly healthier cookies. Heat them up later with some ice cream!!!

I also bought a cantaloupe and cut that up for snacks this week.

Monday Motivation**June 18, 2018

This was a harder week for me, for whatever reason I was EXHAUSTED this week. Everyday was a struggle and I ended up working out 4 out of 7 days. Not my best week but I will take it. I still worked out more days than I didn’t.

New favorite!!!! Chocolate shakology, frozen strawberries, milk, a smidge of sugar free vanilla creamer, a little coffee (in my life there is no such thing as too much coffee) and some water to thin it out…..tastes like a chocolate milkshake!!!! Soooooo good!!!!

Arm muscles are slowly coming along!

In case I didn’t mention it, I’m down 6 lbs so far!!
